The difference is between countable and uncountable nouns! It's the plural form "Olympics" for the noun when referring to the whole of the event and not just one event. This is because "the Olympics" refers to more than one "Olympic game." So a singular event could be considered an "Olympic" game or event, but all the events together are "the Olympics." Ex: The Gymnastic' Olympic event is starting today at 3 pm. Ex: I can't wait to watch the Olympics! Ex: She became an Olympic medalist in 2021.
