You could actually use either "the sound" or "the sounds" here! The nuance is that "sounds," plural, indicates that there is more than one type of sound coming from the wind instruments, rather than just one general "sound." That's because each wind instrument sounds a bit different, depending on who and how it is played! Ex: The sounds of a storm are all so interesting to listen to. => more than one sound Ex: I love the sound of rain. => one general sound.
