If I say "I loved something" instead of "I was in love", does the nuance get changed?

No, the nuance is not really changed if you were to replace "I was in love" with "I loved" something. To be "in love" expresses a state of loving something, however, the overall meaning is not really changed. Ex: I was in love with basketball when I was a kid. Ex: He loved to read when he was young.
