What is the difference in nuance between “what I wanted to say” and "what I intended to say"?

Great question. The word "intend" has the nuance of being more of a plan, than "want". In comparison with "want", "intend" implies "intention", which is deliberate. You have decided to take some ACTION to make something happen. Ex: I intend to come to the party. "Want" is much more vague; it means that you would like something to happen, but you are not actively making it happen - often, because it's outside your control, so you can't make it happen. So here, by saying "that's not what I intended" suggests that there was a plan and a mistake was made. Ex: I want to go to college. => I would like to go to college. I desire to do it. Ex: I intend to go to college. => I will go to college. My goal is to go and I plan to do it.
