in 'I am', 'fine' is omitted, right? When can I omit things like this? And sometimes I see 'so' used in some situation like 'I am so'. I'm not sure if it's relevant to this, but could you also tell me when I can use 'so' like that?

Here, I wouldn't say "fine" is omitted. It's more that she is affirming what she said before! She already stated "I'm fine" before, so she's affirming it again by saying "I am." to reassure him that she's fine! This is often done when trying to reassure or convince someone or yourself of something. "I am so" is usually followed by an adjective to describe how someone is feeling. "So" emphasises the feeling! Ex: I know I can do this. I can. Ex: Don't worry. You'll get there on time. You will. Ex: I am so excited to see you! Ex: I am so miserable.
