"Off" is a phrasal verb here. You can use "off to" in a couple of different ways. One way to use it is before you are going somewhere. Ex: Off to the airport! Can't wait to see Florida! Ex: We are off to school. Another meaning of "off to" is the beginning of something. Ex: She is off to a good start. Ex: They are off to a great start!
