"No" does not mean "nothing". "In between" here is a noun that indicates a thing that is between two extreme options. In this video, the girl decides to be the evil queen because she can't be with the guy she likes. So rather than being in-between, where she can't be with the one she loves and also not be the queen, she decides to be the evil queen instead.
