Why did he put "the" in front of tomatoes? And shouldn't I put "the" in front of "lettuce" and "cucumber" as well"?

"The" is an article and is being used to refer to these specific things. In this case, they are being treated as a group or list. Think of "the" as being shared by all the items that follow in the list. Generally speaking, repeating an article is not necessary for a list. Ex: I saw the cat, dog and bird cross the street.
