Does the phrase "so" has the same meaning as "I heard?" Then can I replace the sentence with "I heard you're fast." just like the phrase "I heard you paint houses" in the movie "The Irishman?"

You're right, "so" in this context implies an assumption and is used when someone knows or has heard about someone or something and so they make an assumption about them. You could replace this with "I've heard you're fast" here, however this would sound a little strange because it is already implied that he knows he is fast since he knows he is Batman.
