Native speaker’s answer

If you think about it, any day of the week means seven days of the week. Basically, it means any day or anytime. The speaker is saying that he would put his faith (since he works in insurance, insurance is his currency) in this couple any time, any day. Ex: I would be happy to help you any day of the week. Ex: You can come in for an appointment any day of the week.
