What would be the main difference between "meeting" and "conference"? Are they interchangeable?

These terms are similar in meaning but certainly not interchangeable. When different people meet for a purpose, it can be considered a meeting. A conference is a formal (work/business) meeting for discussion, and thus is a type of meeting. However, the opposite is not true. A meeting is not a type of conference. Ex: I have a meeting with my professor today. Ex: I am attending a work conference on cryptocurrency.
