What does "in amounts" mean and why is plural form "amounts" used?

Good question! "in (an) amount(s)" means the total count/number of whatever is being described. The reason that the plural "amounts" is used is because the speaker is speaking generally. "People can't get enough of each other" - here, "people" is used to talk about different individuals generally and in plural (more than one person). Since these different people each might prefer to interact with a different "amount" of other people, and the speaker is putting all of them together, she has to use the plural "amounts" since the statement is general and not specific. Ex: Companies don't need infinite workers, they need them in amounts that match the company's needs. Ex: We need lots of different drinks for the party. I'm not sure in what amounts.
