Excellent question. The phrase "overshot" is past tense of "overshoot", which means to go further than the end of or past something, without intending to. In other words, going past a target or stop point. As such it can be used for thing other than a train. Ex: The plane overshot the runway and finished up in the water. Ex: The footballer overshot the goal and missed. Ex: We overshot our budget this month by 10%. Ex: My boss doesn't want the HR department to overshoot by laying off a large number of people and having to hire them back.
