Why would the speaker mention an elephant all in sudden? Or is it a metaphor?

That's right! He's using it as a type of metaphor as an example for the speech. He chose something randomly. He could've said anything else, but he said "elephant." I also think the randomness of an "elephant" makes one think about elephants more. Ex: Don't think of a horse. Ex: For example, if I say "zebras are blue," you wouldn't believe me.
