Why would Peter Parker say "ever since" here? Would it sound awkward if I just say "since" instead?

It would sound a little awkward! The use of "ever since" emphasises a time reference, as if saying "from that time to this." It's more specific than "since." "Since" has more meanings not related to time, so it's clearer to say "ever since" in this context. It's also a bit more dramatic. Ex: From the moment I got bit by that spider, I've only had one week where my life has been normal. Ex: Ever since I got here, everyone has been so kind to me. Ex: Since I got bit by that spider, I'm not afraid of bugs anymore. Ex: Since she missed the train, she'll be late to work.
