"Play with something" means to mess with or to handle something in a careless way. In this movie, Thor is blaming Tony Stark for Ultron; that if he wouldn't have created this extremely intelligent program, they wouldn't be in the situation that they are in. If used in this context, it doesn't refer to playing with a toy. Ex: Please don't play with that! Those statues are really expensive. Ex: Quit playing with your food.
