A "proxy" is a representative, stand-in, or substitute for something else. In this case, "Rachel is also our proxy, we enter the show through her" is used to mean that Rachel is our substitute or representative that we use to view and experience the show. Ex: During the Cold War, the US and Russia used other countries to engage in a proxy war. Ex: My brother will act as my proxy during my court case.
