Is the verb "do" omitted before "you"? Is it common to omit an auxiliary verb in this way?

Yes it is! "Do" is omitted from this sentence. The sentence should be "Why do you..." It's not really common to leave out this verb. I think it was done to fit Jimmy's character. Leaving out an auxiliary verb is done occasionally but not often.
