Is it ok to replace "as the big winners" with "as a big winner" in this sentence?

Not quite! That's because even though they give one example of Amazon, the first part of the sentence mentions "international companies," plural. The example is a subordinate clause and isn't part of the main clause. If the first part of the sentence was changed to a singular "international company," then "as a big winner" could work! Ex: A big international company should not emerge as a big winner of the COVID-19 crisis. Ex: Big Hollywood movies, such as La La Land, should not get as much attention as they do.
