Good question. You can use the expression "to be busy doing x" [x = noun/gerund] to state that you are busy because of something, that doing something takes up a lot of your time. In this case, Emma Watson is stating that she's so busy doing acting that she hasn't had the time to do anything else. Ex: I'm so busy doing chores that I always feel exhausted at the end of the day. Ex: You're so busy doing other people's work that you don't even have time to do your own.
