Like how it's used in "mid-January" here, can I say "early-January" or "end-January"?

You could say, "early-January!" But, "end-January" is not commonly said. Rather, it's "end of January." Ex: I'm going on a trip at the end of January. Ex: I'm going on a trip mid-Jan. Ex: She gets her bonus early-January, so we'll buy the present for her parents then.
