Good question! "To take on" something means to undertake or accept a task, responsibility, or challenge. To "take on more than what you're able to handle" means to undertake a task that is too difficult for you to finish or achieve. Ex: I thought I could take on this project, but it's too much for one person. Ex: I took on a new research project at school.
