Adele is using a ship as a metaphor! A "bare ship" is one without sails, and without sails, the ship can't do anything or go anywhere. It is powerless and out of control. So she's saying she'll make the person powerless by getting rid of his "sails"- whatever those may be in his life. Ex: You'll be like a bare ship if you don't have your status and money. Ex: Jane will lay your ship bare if you don't do what she says.
