"All that" is a little bit different from "everything," as "everything" is a bit too broad of a term. It's more specific to the topic he's referencing! So by saying "all that," he's referring to all the things related to "Farce." This can be used in reference to other topics as well. Ex: I really like dancing and all that stuff. I don't often meet other people who are interested in dancing too. Ex: He knows a lot about the stock market and all that.
