Within context, yes, it would sound awkward! That's because the jury is asked to say if the defendant is "guilty" or "not guilty." Outside of this very specific context, it would be fine to say "innocent" instead of "not guilty." Since, usually, if someone is "not guilty" of something, they are "innocent." Ex: We, as the jury, find the defendant not guilty. Ex: I swear he's innocent. He wouldn't hurt a fly. Ex: He's innocent. I think it was someone else. = He's not guilty. I think it was someone else.
