I'm not a hundred percent sure, but from my understanding, they would have to avoid really tall buildings, other aircrafts, and bad weather when flying. Perhaps when landing, they have to make sure they land on the airstrip otherwise they could possibly hit other things. Or if they're smaller aircrafts, perhaps like fighter jets or crop dusters, they can fly lower to the ground, so they may have to avoid more obstacles like trees and mountains. Ex: The crop duster nearly crashed into the mountain over there. Ex: When flying into a city with bad weather, I have to avoid tall buildings.

In this case, I think the video is a clip from a larger show and the chef was probably making something before this and now he is moving on to the next dish. Ex: Okay, on to the next question. Ex: I think he's already on to the next thing.
