"Be eating" refers to someone continuously eating something as a part of their regular diet. "To eat" can have the same meaning, but can also refer to eating a singular time (rather than eating something regularly), depending on the context. Ex: She should be eating fruits and vegetables everyday to stay healthy. ("Be eating" is used to describe eating something regularly) Ex: What are we going to eat tonight? ("To eat" is used to describe eating a singular time) Ex: I like to eat nuts as a snack. ("To eat" is used to describe eating something regularly)
