Is there any reason not putting "the" in front of "one last thing"? I thought "the one last things" sounds more natural.

Using "the" is not necessary here because "one last thing" has not already been introduced or known. However, if you put the article "the" in front of "one last thing", it would sound the same and it would be grammatically correct. There is not really much of a difference with or without it in this context.
