"Sort of thing" has a similar meaning to "and so on," "stuff like that," "etc.," and "and so on/forth," so you can use the phrase when you want to indicate that the rest (of the list) consists of similar or related things or ideas. Ex: I love extreme sports. Paragliding, skydiving, that sort of thing. Ex: Do you have any hobbies? Like painting, reading, cooking, those sorts of things.
