What does "buttermilk" mean? I assume it is a dairy product, but what makes it different from ordinary milk?

That's right! "Buttermilk" is a dairy product. It's a fermented drink. Traditionally it's made from the liquid left over from churning butter! Hence the name <butter> milk. Although, now, I think the "buttermilk" you typically buy in grocery stores is milk that has been heated and fermented. Ex: The recipe calls for buttermilk, but I'll use plain yogurt instead. Ex: Buttermilk by itself is very sour.
