When do people say "now?" I see it a lot in the beginning of a sentence, but I don't think it always refers to the time.

You're right! Here "now" doesn't refer to time. Here "now" is used at the beginning of the sentence to draw attention to a certain point or statement! "Now" can also express a consequence of a fact. Or to describe something as fashionable and trendy. Ex: Now, I didn't get your report this morning. When will it be done? => emphasizing something important Ex: Now that it's winter, it'll get colder. Ex: That jacket is so now! Wow.
