Can I use "have good profit margins" instead of "had good profit margins"? Why did the speaker use past tense?

The speaker is using past tense because she is speaking about all you can eat restaurants from the past. So while you absolutely can say "have good profit margins", this is grammatically correct, it would be the wrong tense in this context.
